Lactase, also known as β-Galactosidase ( EC 3.2.1.23, hereinafter referred to as β-GAL ), is widely found in animals, plants, microorganisms and cultured cells. It can catalyze the hydrolysis of β-galactosidase bonds in β-galactoside compounds, and also has the effect of transgalactoside. β-GAL can not only release stored energy for the rapid growth of plants, but also catalyze the hydrolysis of polysaccharides, glycoproteins, and galactose residues at the end of galactose lipids during normal polysaccharide metabolism, cell wall component metabolism, and cell wall degradation during senescence, releasing free galactose.

β-GAL decomposes p-nitrophenyl-β-D-galactopyranoside to produce p-nitrophenol, which has the maximum absorption peak at 400 nm. After adding inhibitors, the enzyme activity is inhibited and the production of p-nitrophenol is reduced. Based on this, the inhibition rate of inhibitors on β-GAL can be calculated.
