Test Principle:
Hydroxyl radical is a kind of free radical which is highly toxic and harmful to organisms produced by human body in the process of metabolism. It can oxidize carbohydrates, amino acids, proteins, nucleic acids and other substances in tissues, causing oxidative damage and destruction, leading to cell necrosis or mutation. Hydroxyl radical scavenging ability is one of the important indexes of antioxidant capacity of samples, which is widely used in plant stress, antioxidant health care products and drug research.

Fe2 + and H2O2 produced hydroxyl radicals through Fenton reaction, and Fe2 + was oxidized to Fe3 +, so that Fe2 + which could complex with 1,10-Phenanthroline monohydrate decreased, resulting in a decrease in absorbance at 510 nm. The ability of the sample to prevent the decrease of absorbance at 510 nm reflected the ability of the sample to scavenge hydroxyl radicals.
