Test Principle:Proanthocyanidins ( PCs ) are flavonoids with different degrees of polymerization formed by the condensation of flavan-3-ol monomer. They are widely found in various organs of plants. They have strong antioxidant and free radical scavenging effects. They are widely used in the pharmaceutical, food, cosmetics, and health care industries. Under acidic conditions, 4-Dimethylaminocinnamaldehyde ( DMACA ) and proanthocyanidins will undergo condensation reaction to form a blue-green product with a characteristic absorption peak at 640 nm, which can be used for qualitative detection and quantitative analysis of proanthocyanidins.
