Anthocyanin is a kind of natural pigment widely found in the cell sap of plant roots, stems, leaves, fruits and other organs. It is a kind of flavonoid polyphenolic compound formed by the combination of anthocyanin ligands and various sugars through glycosidic bonds. As a natural pigment, anthocyanins make plants present colorful colors and have a variety of health care functions. Therefore, they have broad application prospects in natural edible pigments, health care products and pharmaceutical industries.

The determination of anthocyanin content by single PH method needs to be carried out in a constant PH medium. When the pH is 1, the anthocyanin has the maximum absorption peak at 530 nm. The anthocyanin content in the sample can be calculated by measuring the absorption value at 530 nm.
